Mac n' Cheese Update

Dear Adam,

I have decided to write you an open letter to thank you for the shipment of 16 boxes of mac'n cheese you sent me last year. At the time, I'll admit I was overwhelmed and thought that there was no way I would finish that many boxes of macaroni....I had never eaten that much macaroni in a single year in my entire life (I'm pretty sure). So, this morning as I am thinking about what to do for lunch, what is available, etc I glanced in the box where I keep my macaroni. I was shocked to discover that I have a mere 3 boxes left. (I should also say that there were a few other scattered contributions of macaroni from other people-Grandma, Jimmy, Dad, Caitlin? In any case, the only person who did the insane thing of sending a Costco bulk box of mac and cheese to Central America was Adam so....that's why this is exclusively addressed to him.)

Let me explain what mac and cheese has come to mean to me in my life in the Peace Corps. It is in many ways my salvation. It is a taste of childhood. It saves me from the days when I cannot eat Salvadoran fried chicken, beans, rices, or pupusas. It saves me from the days when my Peace Corps budget doesn't seem to stretch half of the month much less the whole month. And, sometimes it can be a cultural experience because passing it off to Salvadorans who have never eaten yellow cheese sometimes makes them as happy as we were when we used to get it served to us by our own mothers.

At any other point in my life, I never would have regarded macaroni and cheese as highly as I do here but in my service it has taken on new meaning. That being said, when you come to visit me (VERY SOON) you should plan on smuggling some extra boxes of mac and cheese into your bag in order to durar until the end of my service.

Love,

Addie
